After a while you will see that this elderly gentleman no longer has the reflexes of the past and he will not be able to keep up with you, there you will just have to run away. This solution, however, has a small return that is certainly unpleasant, but which in no way affects the story or the gameplay. If you try to enter the shop again, the old man will not be so calm and he will not think twice about killing you, as well as your name will definitely change to Thief.
